Why I love soups so much and my no hummus challenge

😇What's great about soups is that they usually don't contain many calories, but are quite filling and healthy. Also, it's really fun to cook them, because in many cases all you need to do is to through stuff into a pot and have a glass of wine while soup is cooking. ❤️

And going to my no hummus challenge... The only reason behind it is to become more creative when it comes to vegan dips and spreads, so today I will be sharing a really easy and tasty recipe for one awesome vegan spread that I invented today (by the way, I won't be eating hummus only every second month, so for those who loves it - don't worry too much 😇)

What's new in my life

As you know 2016 was a super awesome and uplifting year for me. 2017 started on a really positive note as well. 

I love my new job, and I love being in London. Moving to this city was one of the best decisions that I made so far. 

On Friday I had my very first corporate ball, which was super cool, and there are so many things to look forward too as well. My sister is coming to London in few days, my dad will be here soon as well, I am going to Amsterdam after my birthday and many more super stuff will be happening soon.

Also, I feel like I need to explain to you my no hummus challenge. I promised to myself that I will eat less of it in 2017, just to become even more creative in the kitchen. For the ones that love hummus - don't worry because I won't be eating it only during odd months :) 

But for now, we shall move to the recipe ❤️😇

For Soup You will need

🌱 15-18 baby potatoes
🌱 2 cups of carrot strips
🌱 2 cups of kale
🌱 2 litres of water
🌱 3 oxo veg cubes
🌱 couple chilli peppers
🌱 some pepper
🌱 some salt
🌱 1/4 cup of fresh coriander
🌱 75ml of red wine

For Spread You will need

🌱 75 ml of single vegan cream (go for Alpro)
🌱 bunch of finely chopped coriander
🌱 bunch of finely chopped kale
🌱 3 cloves of garlic
🌱 chilli oil
🌱 salt
🌱 pepper
🌱 dry parsley
🌱 50g of oat flakes
🌱 1 table spoon of chia seeds

The Recipe

As I said before. Soups are super fun to make, and they are really easy usually. For this one, you would need to chop some baby potatoes, put some carrot strip and boil them for 15 minutes. After that, put in some veg stock cubes, kale, chillies, pepper, salt and leave it for half an hour. Add in some red wine and let it sit on a very low heat for one more hour (yes, you can drink the rest of the bottle while waiting) 😇

I have some pictures below so you could see how easy is that. Now let's move on to my creamy kale spread.

Finely chop kale, coriander and garlic. Fry it with some chilly oil for 5-7 minutes. Then reduce a heat to the lowest and slowly add soya single cream. Keep mixing everything and add in some oat flakes and chia seeds. Stir it well one more tine and reduce heat completely. Leave it in a pot for at least 30 min.

So here you go. Perfect Sunday meal is ready. Put my creamy kale spread on a toast and have it with soup. It's a really nice, colourful and filling meal for a perfect end of the week.
