spring is coming!
After one horrible winter that we had, it finally seems that spring is coming to London. As days are getting longer and there is plenty more time for exercising, having enough protein is extremely important. This vegan recipe is made using graze plant protein (almonds, black beans, carrots & beetroot) and is fun and quick to make!
I love graze snacks as they are packed with plant based proteins. In addition, graze makes healthy delicious, and that’s exactly what I am trying to do with my recipes!
Simply put graze black pepper veggie protein punnets, plant based yogurt (I used almond, as it’s my favourite, but you can go for cashew or soy one), and fresh basil in a large blender. Squeeze a lemon, add spices in and blend for about 2 minutes on a maximum capacity. Then mix in flour and pre-heat a non-stick frying pan with some olive oil in it on a medium heat.
Form medium size dough balls, then press them in a frying pan. Flip pancakes over after 1-2 minutes and cook on the other side for the same amount of time till pancakes are golden brown.
Serve with some plant based yogurt & basil 🌿
