Let's move on straight to the recipe, and I will have some photos from my birthday trip to Amsterdam waiting for you at the end! You will need:🌱 1 pumpkin (larger) 🌱 1 cup of water 🌱 2 veg stock cubes 🌱 1 large onion 🌱 4 cloves of garlic 🌱 2 large carrots 🌱 handful of fresh coriander 🌱 some parsley 🌱 50-60ml single soya cream 🌱 2 table spoons of chia seeds 🌱 salt The recipe:Chop pumpkin into 5-6 large pieces. Then take out seeds and spoon out pumpkin pieces leaving less than 1cm to the skin. I usually use a spoon for this, but you can do it with a knife too - just be careful then. Wash and peel carrots, and chop them in large pieces as well.
