Vegan Pumpkin Soup

Warm, filling and delicious

So I finally got a blender! Yes I know, it took me a while... Anyway, I tried to make a healthy blended pumpkin soup last night and I was very pleased with the outcome. 

The recipe is easy, but a bit time consuming, so I suggest making it on a weekend 😇

Let's move on straight to the recipe, and I will have some photos from my birthday trip to Amsterdam waiting for you at the end!

You will need:

🌱 1 pumpkin (larger)
🌱 1 cup of water
🌱 2 veg stock cubes
🌱 1 large onion
🌱 4 cloves of garlic
🌱 2 large carrots
🌱 handful of fresh coriander

🌱 some parsley
🌱 50-60ml single soya cream
🌱 2 table spoons of chia seeds
🌱 salt

The recipe:

Chop pumpkin into 5-6 large pieces. Then take out seeds and spoon out pumpkin pieces leaving less than 1cm to the skin. I usually use a spoon for this, but you can do it with a knife too - just be careful then. Wash and peel carrots, and chop them in large pieces as well. 
Boil the water and add pumpkin, carrots, stock cubes and pealed (but not chopped) cloves of garlic. Cover a pot and leave for about 20 minutes on a very low heat. Remove the excess water and leave for about half an hour to cool down a little bit. Meanwhile, finely chop onion and coriander. Fry the onion for about 5 minutes and set aside.

When pumpkin and carrot pieces are not boiling hot anymore, add in fried onion, some coriander (not all, because you will need it at the end), chia seeds, dry parsley, soya cream and salt. Blend everything for about 5 minutes, till you get a smooth creamy texture.

Heat it up again for about 3-5 minutes, decorate with some cream and fresh coriander, and enjoy!
