First things first - ingredients for pancakes
As always, I kept things super simple, so you can have more time enjoying your Sunday than cooking. Whether you decide to make banana or blueberry version - the recipe is the same.
First of all, mix dry ingredient, then slowly pour in coconut milk. Do not over mix - it needs to be a little lumpy. Add in vanilla extract and set aside. Now take a large frying pan, put some olive oil and bring on the medium heat. Meanwhile cut bananas (if you prefer blueberries, you don't need to do anything).
When the pan is hot enough, pour pancake dough in - you want to use about 2-3 large spoons per pancake. Place fruit on each pancake (about 8 blueberries OR 4 banana pieces) and bring the heat to minimum. After 3-4 minutes flip pancakes, press them a little bit and fry for 4-5 more minutes.
Serve hot and don't forget to put banana slices or blueberries and some maple syrup on top! That's your perfect Sunday breakfast sorted!
