Last week I had a mini holiday in Spain. For me, this was the first time in Barcelona and I felt in love with the city immediately. From breath taking architecture, to stunning nature and lovely beach - I loved it all. My favourite bit of the city was the Gothic Quarter, and of course, Sagrada Famillia was incredible. I also went to couple food markets so I could fill up my cupboards at home with Spanish spices. It was an amazing city break and I am definitely coming back there soon.

1. wash and chop mushrooms & green beans. Heat up a large frying pan with some olive oil and white wine in it. Add mushrooms, beans & dry chillies and cook for 7-10 minutes on a medium heat.
2. cut cherry tomatoes in halves and add them to the frying pan along with paella spices. I bough paella spices in local market in Barcelona but I am more than positive that you can find them in London markets too.
3. cook everything for 5 more minutes, then add remaining ingredients - vegetable stock, rice, oregano, turmeric, chilli flakes, salt, pepper & chopped garlic.
4. leave a frying pan on a high heat for 10 minutes, then stir well, reduce the heat, cover & let to sit for at least 20 minutes. That's it! Serve with some sangria & enjoy.
