Cut kale, asparagus & baby corn into medium size pieces. Finely chop coriander & red onion. Heat up a large frying pan with some olive oil and cook all chopped ingredients for about 7 minutes. Meanwhile put couscous into a bowl or a box with a lid and pour over with boiling water (twice as much water as you have couscous). Cover bowl/box and leave for 5 minutes.
Once couscous is soft, put it into the frying pan alongside other ingredients. Add soy sauce & black pepper. Cook for 3-4 more minutes. And that is it! Enjoy 🌿
