1. Start with the pastry - take large bowl, add 200g of flour, 100g of caster sugar, 100g of brown sugar, pinch of salt and 250g of room temperature dairy free butter (for baking I normally use "butters" with olive oil rather than coconut, but it's up to you).
2. Combine all ingredients with your finger tips. If you see that the pastry is very sticky, add a little bit more flour. If it's too dry - add extra butter, and if you are sweet tooth - don't be shy and add more sugar! 😋 place pastry in a freezer.
3. Take a large baking dish - combine washed cut apples, blueberries, cinnamon, 100g of caster sugar & 100g of brown sugar. Melt 100g of vegan butter and pour over the fruit mixture. Then stir everything making sure sugar and cinnamon is spread evenly.
4. Take out pastry and stretch over the fruit. You can use fork and biscuit shapes to decorate pie's top. Place in the oven for 30 minutes (200C) then reduce the heat till 120C and bake for further 15-20 minutes. Serve with dairy free ice-cream and soy cream 😋 Enjoy!
