Quick Vegan Party Bites Pt. 2

Past couples weeks haven't been the best ones for me. I was not feeling very well, was working like crazy and then on top of that I needed to say so many goodbyes to so many wonderful people as well. Everyone is leaving Glasgow, and I am about to move to London soon too. So hectic times, but yesterday I finally took an evening of and did some cooking.

This post has a recipe for those who don't like being alone and are surrounded by people all the time. So if you want to wow your vegan and not so much vegan guests this recipe is just for you. Extremely tasty and creamy mini quiches with spinach will be loved by everyone. So if you are interested, click read more and enjoy :)

Easy and fun to make, not expensive and d-e-l-i-c-i-o-u-s ​❤️
This is a quick and fun recipe that does not require many ingredients. If you are throwing a party or waiting for some friends to arrive, this is ideal, because you will have about 20-30 minutes to get ready while your quiches are in the oven. 

For this recipe you will need:

🌿  240-250g frozen puff pastry
​🌿  50g plain flour
🌿  200g creamed coconut
🌿  200g steamed spinach
🌿  salt & pepper
🌿  garlic powder
🌿  dry parsley
​🌿  1 x muffin (12) OR 1 x cupcake (24) baking tray

Easy Peasy Preparation:

First of all you need to defrost your puff pastry. Follow the instructions for defrosting on the back, but usually you just need to leave pastry bag in room temperature for couple hours. If you do not have enough time for that, you can always put it in the microwave for couple minutes on "defrost" function. ​

​Now you need to steam spinach. If you are using frozen spinach, simply put them in a large pot, set it on a medium heat and cover with a lid. If you are using fresh spinach leaves you will need to boil some water first, then add spinach leaves and leave on reduced heat for about 10 minutes, then drain water from it.

Meanwhile, whisk coconut cream. You don't need blender for it, because it is already soft enough, so simply mix it gently but firmly with a fork. Then add spinach and mix everything very well. Add all spices and set aside.

Then mix in some flour to your puff pastry, otherwise it will be too fluffy. Then divide it into 12 (if you are using large muffin tray) or 24 (if you are using little cupcakes tray) equal 
dough balls. Preheat the oven to 175C and form your dough baskets. Place one ball at a time to muffin / cupcake tray and form nicely shaped basket. Make sure there are no holes and pastry is pressed equally as well. Place a tray in the oven for couple minutes and blend your coconut + spinach mixture even more. Take the tray out and fill your baskets with a mixture and pop into an oven.

If you are using 12 muffins tray - bake for about 30-35 minutes. If it is 24 cupcakes tray - bake for about 20-23 minutes. And now it's time to open a bottle of wine and enjoy life!

Thank you guys for reading this and being with me. Just because I don't post that often these days, it doesn't mean that I'm not cooking. Next week I am going to London again, so hopefully I will have a chance to visit couple vegan places and get some fresh ideas too. Also, I will be on holiday for a week - so look forward for more and more posts from now on!

Even though this month was very very tiring and sad in some ways, I am more that happy about my decision to go to London for good in October and start building my career there :) So wish me luck, as I am more that exited about this new chapter. And I promise I will spend more time on writing content too!
