plant based meatballs

Last weekend I came up with this meatless 'meatball' recipe. If you make enough, they are perfect for the lunch boxes and lazy dinner meals. I have included the actual 'meatball' recipe, as well as pasta sauce if you want to use them in a dish. Enjoy reading and happy tasty Saturday! 🍝

you will need

for the meatballs:
  • 2 cans of red kidney beans
  • 2 red peppers
  • 4 cloves of garlic
  • 1 large onion
  • 1 chilli pepper
  • 2 table spoons of hemp protein powder
  • 2 table spoons of olive oil
  • 2-3 pinches of sea salt
  • 2-3 pinches of black pepper
  • 4-5 table spoons of paprika powder
  • 1/2 tea spoon of chilli powder
  • 1 cup of cooked rice
  • 4 cups of flour
  • some vegetable oil for frying

for meatball pasta sauce:
  • 1 can of chopped tomatoes
  • 150g of cherry tomatoes
  • 2-3 table spoons of olive oil
  • 2-3 table spoons of soy sauce
  • 1-2 table spoons of chosen hot sauce
  • 5-6 table spoons of single soy cream
  • 2 handfuls of fresh spinach
  • 1 tea spoon of chilli flakes
  • 1 tea spoon of paprika powder
  • 3-4 table spoons of mixed Italian herbs
  • 2-3 table spoons of vegan pesto
  • few cloves of garlic
  • few pinches of salt

the recipe

Making 'meatballs' is the easiest part: simply blend all the ingredients above (except flour) for good 5 minutes. Then gradually mix in the flour, form balls and fry them in a vegetable oil!

Now onto the pasta sauce. Start by putting half chopped cherry tomatoes in a baking tray and placing them in a 200C grill for about 7-9 minutes. Meanwhile, heat up a large frying pan and pour chopped tomatoes and olive oil in. Add finely chopped garlic.
Let it bubble for 5 minutes, then add in spices, pesto, soy cream and oven baked tomatoes. Cook for further 5 minutes on a low heat, then place cooked meatballs in the pan and sprinkle some soy and hot sauce on top.

Keep gently mixing the sauce and rotating the meatballs till they are covered in tomatoes. Finally, add in spinach, stir it in and cook for 5 more minutes. Then reduce the heat and cover the pan.

You can either eat this on its own or serve it with pasta! Enjoy!
