Peacakes. Green Goodness in 30 minutes

Mushy Peas & Red Onion Oven-Baked Pancakes

🌱 super green, dairy-free, egg-free vegan alternative to traditional pancakes 🌱

Recipe is not complicated but rather fun, and they taste amazing (approved by non-vegans as well)!

And it does not take that long to make them either therefore perfect for busy people too 🐝

So if you want something light, warm and green for your Saturday dinner, have a look!
As you probably know I am currently having my last-ever exam session in University. 🐝 That means long hours in library and sleepless nights... but sometimes you just need to give yourself a day of. And what do I normally do on days off? 🙈 Some inventions in my vegan kitchen of course! That's how these super green oven-baked mushy pea cakes happened. 

You will need:

🌿 300g of mushy peas
🌿 75g-100g of flour
🌿 1 medium size red onion
🌿 1 tea spoon of baking powder
🌿 fresh parsley
🌿 garlic powder
🌿 olive oil
🌿 salt + pepper

​I made a lovely red onion dip for them from just few ingredients, so give it a go as well!

🌿 1 small red onion
🌿 2 table spoons of flour
🌿 olive oil
🌿 salt+pepper

In one bowl mix flour and baking powder, in another - mushy peas, diced fresh parsley and garlic powder. Preheat the oven to 180C. Then cut the onion: the finer you chop it the better it is. 

Take a large bowl and combine dry ingredients with greens and onion pieces. Mix everything very well (stir at least for 2 minutes, because you don't want any flour lumps in your pancakes...). Then put some tin foil on the baking tray and form pea cakes in it. 
Put the tray into the oven for 7 minutes, and after carefully flip each cake using two forks. Sprinkle some salt and pepper on each one and put the tray back in the oven for about 5 minutes. Take it out again and change your oven settings to Grill (highest level). Pour a tiny bit of olive oil on each pea cake and rub it it, if you want you can sprinkle some more sea salt as well. Keep the tray in a grill for 2-3 minutes till they look crunchy and nicely brown. 

Red Onion Dip

Meanwhile make the onion dip that literally takes seconds. To be honest, I forgot to get Sweet Chilli sauce, that goes fantastically well with these vegan cakes, therefore I was forced to improvise a bit, and the result was surprisingly delicious!

Put a frying pan on the maximum heat and when the oil is extra hot pour in finely chopped red onion. Then stir in the flour. Keep mixing everything for 2 minutes (non stop). If you see that the sauce is too dry, add more olive oil. Simply season with salt and pepper.
