This post contains one more gnocchi recipe (yes, I am still in love with them) that is quite spicy. You probably know that I'm a big fan of mushrooms, so I thought I will make one with them.

Also, there are more insights into my graduation week. In this post I have some pictures from Loch Lomond and our awesome weekend there. So if you want to know more about gnocchi and my holidays, press read more and enjoy!

For this recipe you will need 🌿

  •  250g of Mushrooms
  • 100g Green Beans
  • 1 bag of Gnocchi
  • 1/3 can of Tomato Paste
  • 1/2 Large Onion
  • some Olive Oil
  • pinch of Sea Salt
  • 2 tea spoons of Garlic Powder
  • 4 cloves of Fresh Garlic
  • 3-4 tea spoons of Chilli Powder
  • Chilli Flakes

  • Good Mood
  • Day Off :D

Makes about 3-4 portions, so perfect for next day's office lunch or family dinner. Low in calories as well! 🌿

The Recipe, Loch Lomond and Speed Boat

The recipe is quite straight forward, therefore I think it's perfect for a day off -- you do not need to think too much and you can just enjoy yourself and cook. First of all, put a kettle with water to boil and chop mushrooms, onion and garlic cloves. Pour boiling water in a large pot and put gnocchi pasta in it. In a separate pan, fry your mushrooms, garlic and onion in an olive oil. While everything is cooking, steam green beans.

When mushrooms, onion and garlic are golden brown, pour some tomato paste along with all spices. Do not put any salt, because it will be flavoursome already (use sea salt for green beans only). Let sauce to sit for about 10-15 minutes - turn of the heat and place a lid on. After that, simply put gnocchi in the sauce and mix well. Serve with green beans on the side.

And as always, if the recipe seems to hot for you, simply do not put any chillies in it and use less garlic and onion!

Me and my dad
And now few words about my wonderful weekend. I don't know if I told you, but I am working for a company called Reface Scotland. I have two wonderful managers there - Jacqueline and Alan, and when my parent were over here they offered me to spend full weekend with them in their lodges. Lodge that we got was on the lake side (picture for you on the left) with an amazing view! We absolutely adored the place, Scottish people hospitality and their company.

We have seen so many wonderful things, like Highland Games (we were staying very close to Luss village and coincidently they had their annual games that weekend), Falls of Falloch, Lomond Shores, Luss Village and.... speedboat ride! It was absolutely fantastic!

And as usually, couple words from me

Guys, I hope you enjoyed today's post. I know it's quite short but as I promised before, more adventures from my graduation week are coming soon. I also have couple more recipes in mind that I can't wait to share with you.

And I just wanted to say a big big thank to everyone who reads my website, comments on my Instagram page and follows me on Snapchat. You guys are amazing and you inspire me to do more and never stop. Also, big hugs and thanks to my wonderful managers Jacqueline and Alan, who made my time with family even more amazing, and obviously thanks to my dad and mum for being so awesome and coming over for my graduation week!

Have a wonderful Sunday evening everyone!

Loads of love
