Once potatoes are peeled and cut, give a thorough stir to cumin, onion & dill. Put heat back on and add in passata or chopped tinned tomatoes. Mix in 5-6 tbsp of Bombay Potato Spice. Add the potatoes in, stir everything once more and cover the pot. Reduce the heat and cook for 5 minutes. Then turn the heat of and leave for 10 minutes. Repeat 2-3 times depending on potato size.
