For 18 muffins you will need:
The recipeFirst of all, preheat your oven to 200C and prepare muffin baking tray(s). Mix flour, sugar, salt and cocoa powder in a large bowl. Then gradually add coconut milk and olive oil, make sure there are no lumps. Put baking soda in a small cup, pour lemon juice over it and mix it quickly. Add the mixture and vanilla extract to a dough and stir it well. Roughly chop Oreo cookies and mix them in as well. Pour the mixture into muffin trays and pop into the oven for about 25-30 minutes. Meanwhile, prepare your frosting and chocolate glazing. All you need to do is add some cocoa powder and a drop of coconut milk into vanilla butter cream and mix very well. I found out that you can get vanilla butter cream that is suitable for vegans in Poundland, and it literally tastes the same as expensive ones for vegans :) You can melt your chocolate in a microwave, just be careful and do it in very small intervals. Add some coconut milk if needed. By the time you have your frosting + glazing ready and your kitchen cleaned, muffins should be done. Now let them to cool down completely as only then you can start your decorating process (which we all know is the best bit). Feel free to improvise with decorations, but I will tell you the way I did it. First of all, I put buttercream on each muffin and then pop few mini Oreos on top. Then I sprinkled some brown sugar and poured melted chocolate on top. And here you go - your lovely muffins are ready to be consumed!
