Green Enchiladas

If you thought that Mexican cuisine is not feasible without cheese you were mistaken. Big time. 

Vegan enchilada wraps with green beans, kale, cucumber and hummus.

You will need following ingredients for these green wraps:

  • 4 wholegrain tortillas
  • 1 pot of reduced-fat hummus
  • 1 bag of curly kale (go superfood!)
  • 2 handfuls of green beans
  • 1/2 fresh cucumber
  • 1 lemon
  • some fresh parsley
  • sea salt, pepper and a little bit of chilli powder
  • also good vibes
  • and a tiny bit of olive oil

Follow these simple steps to impress your vegan and not so vegan friends & take Mexican cuisine to the whole new level

Yesterday I spent my whole day in the library. And on the way home I realised that I am craving some Mexican food. But when I think about Mexican cuisine first thing that crosses my mind is cheese. Cheese and cream. Loads of them. But yesterday I made amazing green wraps that were so mouth watering that even my flatmates said that I took cooking to another level.

So if you want to try this vega invention, start with kale and beens. Put a drop of olive oil into a warm frying pan and put kale into it. Cover with the lid and leave for 3-4 minutes. Then stir it and place green beans on top. Squeeze half of a lemon, put the lid back and reduce the heat to the minimum. Leave green vegetables to steam themselves and meanwhile chop cucumber and parsley. Sprinkle some black pepper and chilli into hummus and stir it well.

Now cut your wraps in halves and place them into the oven for 3 minutes. After that your greens should be ready. Spread hummus on every wrap, then place kale + green beans on top. If you love hummus as much as I do, you can put a tiny extra bit of it on the beens :) Sprinkle some pepper, chilli, sea salt and parsley, then squeeze some more lemon juice and place some cucumber slices. Then press the wrap and put it back on the baking tray.

Bake your vegan enchiladas for 5-7 minutes in a 175C oven. When baking prepare the plate - place some hummus and lemon slices there (if you not going to Instagram it you can skip this step :D )
