let's greet 2019 with festive baking

Although Christmas is over, I thought I will share this festive vegan ginger cookies recipe with you. And if you cut other shapes than Christmas trees and snowflakes - you can use this recipe all year long 😋

I also wanted to write a post on 1st of January, as exactly three years ago, January 2016 I became vegan 🌿It's been an amazing 3 years filled with kitchen innovations and discoveries!

you will need:

cookie dough:
🍪 250g of vegan butter
🍪 6 cups of plain flour
🍪 1/2 cup of brown sugar
🍪 1/2 cup of white sugar
🍪 1/2 cup of caster sugar
🍪 6 tbsps of maple syrup
🍪 6 tbsps of apple sauce

🍪 1 banana
🍪 cinnamon
🍪 ginger
🍪 nutmeg

decorating:
💛 sugar powder
💛 chickpea water
💛 food colouring
💛 sprinkles

Ingredients listed above will make you about 5-6 batches of cookies, so if you want less, halve the quantities. Also remember that you can freeze up prepared dough, and because there are no eggs or dairy, it can stay in your freezer at least half a year 😊

Take a large (very large) mixing bowl and combine flour, sugars and spices. In another bowl mash banana and combine with apple sauce - then add the mixture to the main bowl. Pour maple syrup and slightly melted butter (microwave for 45 seconds). Mix everything thoroughly. I always mix cookie dough with my hands 😇 Now cover bowl with cling film and cool down in a fridge for at least 4 hours. Even better if you can leave it overnight.

After dough is nice and firm start rolling it out on floured surface. You should be aiming for 2-3mm thickness. Cut shapes out and bake for 6-7 minutes in 210C oven. Leave them on a cookie rack to cool down before decorating.

decorating:

I have recently found out that water from tinned chickpeas can be used as an egg white replacement in vegan baking. Just whisk it to make it bubbly.

Mix this chickpea water with sugar powder and food colouring to make a glaze for your cookies. Decorate with sprinkles of your choice.
