Few Quick & Super Tasty Vegan Pasta Variations

So today I have two fabulous vegan pasta dishes for you. There is absolutely no chance that you have tried them before, because I litteraly invented them during this week 😍

One is for coconut and spinach lovers, and the second one it for those who like spicy 🌶  food a lot!

I hope that you will enjoy these two, because I absolutely did 😇 😃

My first job in London and other recent updates

So my new job is fabulous. London is fabolous. I've never been as happy as I am now. And I'm more busy than I assumed I would be.

My friends and family are more keen to visit me in London than Glasgow, so I'm surrounded with people constantly 😇 and I love it. On top of that, I am loving my new role and collegues, so everything is pretty smooth in my life now (if we dont speak about my love life lol 😃)

And now, let's move on to my vegan pastas :)

You will need (choose one though)

🌱  some brown pasta
🌱  1 bag of spinach leaves
🌱  some broccoli
🌱  150ml coconut milk
🌱  mint sauce
🌱  salt
🌱
​ parsley
🌶  some brown pasta
🌶  beetroot strips
🌶  tomato sauce
🌶  chilli flakes
🌶  chillies
🌶  salt & pepper
🌶  3 cloves of garlic

The Recipes

before you start making any of them, I would like to say, those are quick recipes, so perfect for those who don't have any spare time (like myself) or just want to wow your guests with something tasty but not at all time consuming. For both pastas, you will need to cook pasta first, so lets start with that and then decide on the sauce 😇

Spinach One

Pour coconut milk into a pot and boil it. When it is bubbly, add spinach leaves and brocoli pieces, turn off the heat, cover pot and leave it for 20 min :)

After that fry your pasta in a large pan and add your sauce. Put some mint sauce in too and after 5 minutes of cooking, your pasta is done!

Spicy One

Cook pasta in spicy olive oil and add garlic pieces. Now it's time for beetroot strips -- add them in, and don't worry if they coloured your pasta. Fry everything for 3 minutes, then add few table spoons of tomato sauce, reduce the heat and cook everything for 5 more minutes.

Add salt and chillies, turn off the heat completely and leave everything for 10 more minutes.
