eat vegan muffins & be Merry! ⛄️

Today I will be sharing a lovely festive recipe - dark chocolate & cinnamon muffins with strawberry jam inside. I went a little bit crazy and made 36 muffins, but recipe below gives you 12 medium size muffins. Enjoy! 😇 ​

The best Christmas present ever ❤️ ​

I am sure that you received the most amazing Christmas presents this year, but for me, none of my presents beat this little creature, that we got about 4 weeks ago.

Her name is Chickpea, and she is only 3 months old. I am sure that you will see this little miracle in my future posts!

And now... Let's go straight to the recipe ​😇

You will need (12 muffins)

❄️ 1 cup self raising flour
❄️ 2/3 cup cocoa powder
❄️ 1 tea spoon baking powder
​❄️ 1.5 table spoon cinnamon
❄️ 1 cup vegan chocolate "milk"
​❄️ 1/2 jar of strawberry jam
​❄️ 100 g vegan butter
​❄️ 2-3 bananas
​❄️ 1/2 cup sugar
​❄️ 1/2 cup of caster sugar
​❄️ vanilla extract
❄️ chocolate, sprinkles or vegan candy for decorating

​Buttercream:
​

​❄️ 100 g vegan butter
​❄️ sugar powder

The recipe

Start with mixing the following dry ingredients - self raising flour, cocoa powder, baking powder and cinnamon. In a separate bowl combine sugar, caster sugar and vanilla extract.

Take a third bowl, put 100 g of vegan butter in it and melt it in a microwave (for about 90 seconds). Pour melted butter over a sugar mixture and chop bananas in. Take a blender and mix everything thoroughly till you see little bubbles, like in a picture below.

Start adding your dry flour/cocoa powder mixture into your butter/banana mixture, and once a batter is even pour chocolate milk in and mix for 3 more minutes. Take a 12-piece muffin tray and pour your batter into muffin cups. Bake for about 20 minutes in a 200C oven.

While muffins are baking, you can prepare vegan buttercream (if you are feeling lazy, feel free to buy it, as I used to do before) 😇 ​ Take 100 g of room temperature vegan butter, pour some sugar powder and start mixing using a fork or a spoon. Keep adding sugar powder until cream is heavy and even. Pop this mixture to a fridge.

Once muffins are baked, let them to cool down completely. Then make 1.5 cm holes in each of them, and squeeze strawberry jam in. Cover each muffin with vegan buttercream sauce.

Get creative with decorating them. I used some sprinkles and vegan dark chocolate pieces, as well as lovely Christmas decorations that I got from TK Maxx.
