Exploring London Flavours. Pt 2

Very Green Curry 🌿

I've seen so many cool things in the shops around my area! First of all, you can find spinach in any form possible - fresh, frozen, tinned, canned, marinated, pickled, in sauce, not in sauce... I could go forever :) that makes your life so much easier when it comes to dishes with spinach. 
Secondly, there are endless selection of spices, sauces and other ingredients that can enhance flavour of any dish. So I keep trying everything, and it's super exciting. Literally, every day in London is exciting.

Exploring, exploring, exploring

Not only I am exploring local shops and flavours, but also trying to see nice places and museums. During work days I am sending CVs, going to assessment centres and interviews, but during the weekend - it's culture time!

Last Sunday I visited The British Museum. It is spectacular. I've been to many museums and galleries in London, but this one will amaze and surprise anyone. It's so massive and full of ancient history! I spent about 3 hour there and managed to walk over 10km until I was sure that I've seen everything. You probably know how it looks from outside, but I am putting a picture below anyway :) And on the right side, you can see a photo from the area where I live. I was trying to capture a beautiful sunset, but things are never as pretty in pictures as in real life.

And now back to the recipe for this Green spinach curry.

You will need: 

🌱 1 can of tinned spinach (in water)
🌱
1 can of fava beans (in tomato sauce)
🌱
4-5 potatoes
🌱
some chilli oil
🌱
some tomato paste
🌱
1/2 red onion
🌱
1/2 garlic
🌱
1 tea spoon of ginger powder
🌱
1 green chilli
🌱
chilli powder
🌱
turmeric powder
🌱
some salt & pepper

🌱 oh... and also some naan bread or something similar if you fancy

The recipe:

First of all, wash, peel and boil potatoes. You don't want to over-boil them, so don't cook them for longer than 7 minutes. Meanwhile, finely chop garlic cloves, red onion and green chilli. Fry them for couple minutes in a hot pan with some spicy olive oil. 

Take potatoes and frying pan away, and place a large cooking pot on the hob (medium heat). Add spinach, tomato paste and beens. Chop potatoes and add them in as well, along with your fried onion, garlic and chilli. Stir everything very well - you should be aiming for thick consistency, so if you feel that it is not thick enough, add more tomato paste. If it's too thick for your taste you can either add some veg stock or simply some water. Now put in all spices, stir couple more times, reduce heat to minimum and leave for 5 minutes. After that, turn off the hob and leave curry covered in a pot for at least 30 minutes, allowing spices enhance their flavours! 🌿Enjoy!
