Crispy & Spicy Rice Rolls

This recipe is perfect as a lovely and innovative meal for one, as well as perfect vegan snack for your party or a cozy night-in with friends or family.

Slightly spicy as I like (but as always, can be less spicy if you wish) this vegan recipe mixes Chinese and Mexican cuisines and brings some innovative and surprising flavours to your kitchen.

A little bit about my life and throwback to sunny days

This summer started on such a promising note and sunny days, but now Glasgow seems like normal Glasgow... With lots of clouds and rain like always. Therefore I wanted to write few sentences about that lovely time that we had here in Scotland at the beggining of June.

First of all, you might think that as a vegan you might miss out on barbecue parties. Not at all. You can enjoy things like grilled corn, courgette and portobello mushrooms with cherry tomatoes. Just grab few vegetables, tub of hummus and few cans of beer and you are sorted!

One of the main reasons beyond my website is not only to promote veganism, but also show to everyone, that you are definitely not missing anything out in life -- it's complete opposite! You become more creative and explore tastes and flavours that you never tried before.

But enough about sunny days and vegan "barbecues", let's move on to the recipe that I have ready for you.

You will need following ingredients...

  • 100g of White Rice
  • 50g of Spinach
  • 50g of Green Beans
  • 2 table spoons of Coconut Oil
  • 4 table spoons of Sweet Chilli Sauce
  • Garlic Powder
  • Chilli Powder
  • Salt + Pepper
  • Handful of Fresh Parsley
  • Mediterranean Herb Tortilla Wraps

And now the Recipe!

This recipe is quite easy but surprisingly flavoursome. It doesn't require fancy ingredients and is slightly spicy and unusual.

First of all boil the rice. Meanwhile steam green beans and spinach. I used frozen ones and it tasted lovely, so you can do the same if you wish. Rice and vegetables should be ready in 10-12 minutes, so after they are done get rid of excess water and mix them together. Add in coconut oil and spices and mix everything well. Place the mixture on medium heat and stir for couple minutes till coconut oil melts fully.

Chop handful of fresh parsley and add it in along with sweet chilli sauce. Mix everything well again, cover the pot, reduce the heat fully and leave it warm for about 10 minutes allowing flavours from spices infuse rice. While you are waiting preheat the oven for 180C.
Take a large baking tray and place some tin foil on it. Than take one tortilla wrap, put rice mixture on 2/3 of it and roll very firmly. Then slice rolled wrap in 5-7 pieces. Put individual pieces on the tray and repeat with couple more wraps till tray is full. Place it in the oven and leave for 15 minutes.

If you are having a party or some friends over, you can place rolls on a large tray and decorate with some parsley leaves and sweet chilli sauce. If you want to make it as a meal, serve with side salad and some chilli sauce on side.

Big fan of spicy food? No problem, add a little more chilli powder into rice and decorate with some chilli flakes and serve with some chilli oil on side! I hope you will enjoy this as much as I did! But most importantly, have fun while making this dish, because cooking is all about new flavours, creations and fun :) And you don't need to be vegan to become extremely creative in the kitchen!
