Hey everyone 😇 This time I have a perfect recipe for Sunday's breakfast or brunch! Couple months ago I tried to cook my very first vegan pancakes, and since then I can't stop making them. This edition turned out to be the best one so far - crispy and full of flavour. In addition, they are quite simple and fun to make and don't cost much either. The recipeTake a large mixing bowl and add all dry ingredients - flour, soda, cocoa powder, sugar and salt. Mix well and start pouring water (room temperature) while constantly whisking. When the mixture is even and without any lumps pour in olive oil and vanilla extract. Heat a large non-sticky frying pan with some olive oil in it. Meanwhile chop up bananas and gently mix them in the pancakes dough. When oil in the pan starts bubbling, reduce the heat to minimum and start frying pancakes. You can use and ice-cream scoop or a larger spoon to pour the mixture into a pan. You should cook each pancake on each side for about 3 minutes. Life hack: if you are making a lot of pancakes for more than 2 people, put cooked ones into a baking tray and pop into a warm oven - they will stay nice and hot before serving. Serve with some fresh strawberries and maple syrup!
