To celebrate Easter and spring, I have upgraded a classic lemon cake to a fancier version, and made it vegan, of course. These muffins are bursting with flavour, and the sourness of lemons and blueberries are perfectly balanced out with vegan white chocolate!
I finished them with home made lemon 'butter' cream, fresh blueberries, chocolate buttons and lemon zest.
Today I will be sharing a lovely festive recipe - dark chocolate & cinnamon muffins with strawberry jam inside. I went a little bit crazy and made 36 muffins, but recipe below gives you 12 medium size muffins. Enjoy! 😇

You will be surprised (at least I was not expecting that) but vegan baking is actually not hard and does not necessarily require fancy ingredients that are hard to find. So if you have a birthday or another occasion that needs a cake this recipe is worth reading!
