blueberry muffins with mermaid frosting (vegan)

who doesn't love some good blueberry muffins? and what if they were vegan...

Chickpea's update

As you probably know, we got a little kitten back in November, therefore I wanted to give you a quick update of how Chickpea is doing (he is actually sitting on my lap right now when I am typing this post). What a precious cat 😍

but enough of precious Chickpea, lets move on to these blueberry muffins! Recipe below makes about 30 muffins, so if you want less just half all the ingredients below!

You will need:

for the muffins:
❤️  3 cups of flour
❤️  2 tbs of baking soda
❤️  1 lemon
❤️  500g of vegan blueberry yoghurt
❤️  3 cups of sugar
❤️  1 cup of vegan "butter"
❤️  2 bananas
❤️  250g of apple sauce
❤️  1/2 cup of almond milk
❤️  350g of blueberries

for the frosting:
❤️  300g of vegan "butter"
❤️  600g of sugar powder
❤️  blue food colouring
❤️  food glitter
❤️  some sprinkles

The recipe:

The recipe is pretty straightforward. If you have a food processor, put flour, baking soda, lemon juice, vegan blueberry yoghurt, sugar, vegan "butter", bananas, apple sauce and almond milk together and mix on a low dough function.

If you don't have the food processor, mix dry ingredients first, then add milk, yoghurt, melted butter, mashed bananas, apple sauce and almond milk and combine everything slowly. 

Finally, mix in blueberries. Be very gentle while mixing. Pour dough into muffin tray - use about 1/3 of a cup for each muffin. Bake in the oven for about 35 minutes over 200C.

When muffins are in the oven - make the frosting. Simply mix vegan butter and sugar powder together. Add some blue food colouring in as well. Once muffins are baked, chill them for at least 30 minutes and then spread frosting. Decorate it with some food glitter and sprinkles. I used violet, silver and golden glitters to create "mermaid" frosting.

Few words from me

I hope you all are going to enjoy this recipe. It is amazingly moist and sweet, your friends and family won't believe it's vegan. 

It was also the first time when I tried mixing bananas and apple sauce to replace eggs, so let me know how's that working for you (I am pretty happy with the result).
