Birthday Celebrations & Few Vegan Recipes Without Any Carbs

4 Super Quick & Super Healthy Veg Dishes

To be honest with you, I was not planning on writing this post, because for me zero carb dishes are something that I make at least 4-5 times a week, and I don't even consider them to be exciting or creative. 

But someone asked me to show a recipe that has no carbs, and I was struggling to get one on my page. So then I went though all my simple veg recipes and picked 4 most exciting ones for you. I hope that you will enjoy this slightly different post!

Cocktails, birthday at work, and other super cute stuff

So I started celebrating my birthday on Monday. You all already know how excited I am about living in London and how much I love this city. But I've never been in such a cute place in London before! 

Cahoots is a super cute little bar in Soho, and it takes you all the way back to 70s. They do the best cocktails imaginable and it feels like you are sitting in a very old tube or a train station. Everything is perfect, starting from setting and music, and finishing with cheerful waiters and amazing ingredients that they are using for cocktails.

That Monday in Cahoots was one of the best evenings, and definitely the best start to my birthday week.

My real birthday was on Friday. A day before I was treated with pre-birthday pints as well!

I had the best day at work, with all super cute things that my lovely Melanie arranged. I got the nicest birthday card, we went for a cozy lunch, marketing girls arranged a birthday cake, and everyone was buying me birthday drinks after.

I moved to London just three month ago, and I had no idea back then, than in such a short period of time I will be having so much fun and that I will be surrounded by most loving and awesome people on planet! 
Anyways, it really is super fun to be talking about all these awesome things that happened to me during my birthday week, but we need to move to few zero carbs recipes that I promised to you.

Recipes

As I mentioned in the description, they all are super quick and fun recipes to make. I thought that the best way for me to describe them is to list the ingredients for each one below, because the recipe will be more or less the same for all 4 of them. 

Wash and chop your vegetables, cook them for 5-7 minutes in a deep frying pan with some olive oil, season with salt and pepper and enjoy! So have a look below what you need for each dish, pick your favourite and have a lovely Sunday meal.

Courgette "spaghetti" with chickpeas

🌱 200g of courgette strips
🌱 100g of chickpeas
🌱 few chilli peppers
🌱 2 cloves of garlic
🌱 some dry parsley
🌱 chilli flakes
​🌱 olive oil

Bean sprouts with peppers and carrots

🌱 100g of bean sprouts
🌱 50g of carrots (thinly sliced)
🌱 handful of kale

🌱 handful of copped cabbage
🌱  4 spoons of mint sauce
🌱 1 green pepper
​🌱 1 tea spoon of masala spice mix

Spicy green beans and bean sprouts

🌱 1 big red pepper
🌱 100g of green beans
🌱 dry parsley
🌱 few chillies (finely chopped)
🌱 spicy chilli oil

Fried mushrooms with peas and cherry tomatoes

🌱 2 large portobello mushrooms (chopped)
🌱 75g of long green peas
🌱 15-ish cherry tomatoes
🌱 dry parsley
🌱 dry dill
🌱 olive oil
