Super Quick Beetroot Soup

Modified traditional mum's beetroot soup recipe that contains beens and spring onion. I changed some ingredients and made it suitable for busy vegans that don't have much time to cook.

It is extremely easy to make (literally takes about 5-7 minutes) and is perfect for office lunch or quick dinner bite!

Soup Ingredients

🌿 1 Jar of Pickled Crinkle Cut Beetroot
🌿 1 Can of Red Kidney Beans
🌿 1 Handful of Diced Spring Onions
🌿 2 Vegetable Stock Cubes
🌿 1 Table Spoon of Olive Oil
🌿 some Salt + Pepper
🌿 some Parsley (both fresh and dry)
🌿 1 Litre of Hot Water

The Recipe

Everything is so simple, that I even feel a little bit ashamed to call this a "recipe", but here it goes. Just follow few steps and you will have some brilliant soup that you will be eating for the rest couple days!

​🐝 step One
Boil the kettle with about one litre of water in it. Place a large pot onto the hob and preheat it. When water is boiling pour it into the pot along with pickled beetroots (pour all beetroot juice to the pot as well). Add in couple vegetable stock cubes (I always use OXO ones but it's entirely up to you) and cover the pot.
​🐝 step Two
Chop spring onions. I alway try to finely cut the white part and then slightly dice green ends. Then take a can of beens and drain the water away from it. Put spring onion and beens in the soup pot, cover and reduce the heat.

​🐝 step Three

Finally, add in olive oil, salt, pepper and dry parsley. Cover the pot, turn off the hob and leave the soup to rest for about 45-60 minutes.

Few words from me

So Glasgow has been treating us with very nice weather lately 🙌 (let's take a moment and remember how bad last summer was 😱). Therefore I am trying to spend as much time as possible outside and hopefully get a little bit tanned before the graduation. 

And you know it is also very easy to combine work and sun! I have so much stuff to do after the exams, but I can't even look at the library direction anymore. So I suggest to all busy people -- grab your laptops, iPads and notebooks and go outside! Get some vitamin D and be even more happy and productive 🐝
