Avocados & Other Greens (or how I was showing to my family that being vegan is fun and exciting)

Yesterday I was introducing vegan kitchen to my family, while visiting them in Lithuania. 

Very summery, light and quite exotic avocado + cashew nuts spread & rucola + couscous salad. Press read more if you want to impress others with tasty vegan creations as well!
Even though I should be studying for the exams now, I decided to have a little break from everything and fly to Lithuania for a couple of days. I thought that I could also show to my family that vegans do eat not only healthy but also tasty food, while visiting my mum's house yesterday.

If you read this post you will find two summery, light and quite innovative recipes that you can try for yourself and share with your friends and family as well. If you want to try them, following ingredients will be needed:

Green Avocado & Cashew Spread

Chilli Infused Rucola & Couscous Salad

  • 6-7 avocados
  • 1 lime
  • 1/2 lemon
  • handful of cashew nuts
  • some black pepper
  • some salt
  • some fresh spring onions
  • (rucola leaves for decorations)
  • 1 loaf of ciabatta bread (I used 1/2 wheat ciabatta & 1/2 rye ciabatta)

  • 1 cucumber
  • 100g rucola 
  • 50g couscous
  • 1/3 jar of black olives
  • some capers
  • chilli infused olive oil

The Spread

First of all, peel avocados, slice them up and then finely chop spring onions. Place avocados into a food processor, squeeze in lemon & lime juice, put some salt, pepper & cashew nuts and then blend everything. 

Place blended spread into a bowl and decorate it with some fresh rucola and cashew nuts. Slice ciabatta bread and grill it for a couple minutes. Place warm ciabatta slices and avocado spread on a large tray and bring it to the table. These bites are perfect with white or sparkling wine and ideal when chatting and catching up with your friends and family.

If you want to serve more than one dish, prepare super simple and fresh couscous salad as well!

The Salad

This green salad is quite innovative and moderately spicy, yet very simple to make. First of all slice the whole cucumber and olives. Then place cucumber + rucola leaves + olives + capers into a large bowl and drizzle with chilli oil. You can add some chilli flakes as well if you prefer more spicy food. 

Then put dry couscous into a small bowl (or even a plastic box) and pour it over with some boiling water, then cover and keep it for 5 minutes till couscous absorbs the water. Add some salt and pepper and pour it over the salad. Mix everything and serve it! It's that simple, so you could have more quality time with your guests!
