All You Need to Know About Vegan Burritos

I decided to start making vegan wraps when I got extremely bored with lunch meal deals. If you are vegan, there is only option for you - falafel and hummus wrap... So I thought I will just give it a go, and started adding all different ingredients for my wraps to make them nice and fun. 

You will see more posts about vegan wraps in the future, but for now let's just focus on vegan burritos! :)

Brighton and other good things that happened to me

First things first, I haven't been blogging much, because my past two weekends were more than adorable. I had few of my friends staying over in London, and then I went to visit Brighton. It was one of the cutest weekends away! Check few pictures below or go to my Instagram to see more! :)

I absolutely adore Brighton, so whoever is going to visit me next in London - we are so going there! :) And now let's go back to recipes! Below, you will find my 3 favourite variations, but I suggest to you get creative and invent even more vegan burritos!

Classic One

  • 2 tortilla wraps
  • 1 can of red beans (in a spicy sauce)
  • few finely chopped tomatoes
  • fajita spice mix
  • 4 cloves of garlic (chopped)
  • 1/2 red onion
  • cooked rice
  • olive oil

Courgette One

  • 2 tortilla wraps
  • 1 courgette (chopped)
  • 4 spoons of mint sauce
  • fresh parsley (chopped)
  • some dill
  • iceberg lettuce
  • salt + pepper
  • cooked rice
  • olive oil

Light One

  • 2 tortilla wraps
  • 100g of chopped tomatoes in sauce
  • 1/4 of cucumber (finely chopped)
  • 4 cloves of garlic (chopped)
  • fresh parsley (chopped)
  • cooked rice
  • olive oil

Super Easy Recipe

Boil some hot water for rice. I usually make more rice, and then I can just make different wraps for few days in a row, without spending too much time. To make rice nice and fluffy, and some olive oil and a pitch of salt.

For all three wraps above, all you need to do is to fry all ingredients for about 15 minutes on a very low heat. Your final step is to stir in rice and then put the filling on top of tortilla and wrap it up. You can have them for dinner or take couple burritos for lunch. I hope you gonna love them as much as I do!
