This is Me
You probably read my "home" section and understand the whole story beyond my brand but if you haven't I will put it in couple sentences. Being vegan for me means exploring new things and being ethical at the same time. I want to prove the world that vegans can be cool, classy & vibrant.
There are four things that drive me in life - new experiences, tasty food, fun people & my studies. And I think that's where my website idea came from, I simply wanted to connect them and show that sometimes most unexpected choices can lead to best decisions. To be honest I never planned becoming vegan... Inspired by my wonderful friend Ineta Valantinaite I became one just because I wanted to try a new diet. And I am horrible with diets by the way! However, since I started this I have been enjoying every second of my vegan life and I know that I inspired few people to change for better already.
Why Vegan in Style?
I had a perception that vegan lifestyle must be completely different from other people's one. But after few month of being dairy-free, egg-free and meat-free girl, I realised that the only things that changed are my diet and my mood. However, my lifestyle as such stayed the same.
I realised that even though my eating habits were different I was still partying, going for brunches and coffees with my girls, and enjoying life in general. Then I thought why not to show that to more people - being vegan gave me so many wonderful things and did not take any fun away. I would like to tell the world that vegans are stylish, outgoing, vibrant and interesting people driven by new experiences!
To make long story short I want to make a little impact. I want to show to people that life can be as classy and majestic without hurting animals and yourself. So join my journey and feel free to comment and share your ideas with me, because I do believe life is about learning as well!
Courgette / Aubergine Veg Crisps (Oven Baked)
Easy recipe for a Friday evening
So first of all you chop the aubergine. Slice it in half (horizontally) and then chop it up. Place slices on the tray and drizzle them up with lemon olive oil (I hope my flatmate won't be reading this, because I took it from her cupboard) then sprinkle with sea salt. Pop the tray into pre-heated grill (set in on level 3) and leave for 15 minutes.
Meanwhile slice the courgettes. The thinner you slice, the better it is. Now take the tray out from the girl and flip every single piece of aubergine, then place the tray back to the oven for 7-10 more minutes.
Once slices are ready place them on a cold tray and let them to cool off. I really enjoy them with hummus (okay, and wine)!
